Regina Weedon
Regina graduated as a chef from William Angliss Institute in 1996, as dux of her year and best practical student, while working under Teague Ezard at Guernica.
From there Regina worked at Georges, as a chef under Paul Wilson, and then traveled to the UK where she ran a small pub/restaurant, just outside of Oxford
She then moved on to working for a tour company in Europe, cooking for up to 50 people with different dietary requirements, on trips lasting between 14 and 50 days.
Returning to Australia, Regina worked in a catering/food store company, Rivers Cafe and then qualified as a personal trainer and now trains clients privately.
Regina now combines her passion for food with health and fitness and leads a healthy, active lifestyle.
Rick Grant
Rick Grant (AKA Uncle Rick) is the most experienced Gluten Free Chef in Australia today.
Rick’s wife Rhonda was diagnosed in 1987 with Coeliac Disease. From this time Rick began researching many alternative flours and techniques that enabled him to write and develop over 200 delicious Wheat Free, Gluten Free, Dairy Free, Soy Free and Fructose Friendly recipes ranging from Breads, Pastries, Cakes, Puddings, Soups, Sauces and Biscuits.
During this time Rick opened and operated 3 renowned ‘Uncle Ricks Coeliac Heaven’ Bakeries.
In 2006 Rick branched out into the mainstream market via Supermarkets. For this Rick joined with Patties Foods and now supplies 10 Gluten Free products through the Supermarket freezer section Australia wide.
Rick is also involved in a new innovative venture ‘The Pastry Pantry, using his unique skills to bring Gluten Free pastry sheets to the Coeliac and Wheat Intolerant consumers. There are 4 products in the range - Savoury Shortcrust, Rough Puff, Sweet Shortcrust, and Sweet Chocolate Shortcrust.
Rick’s latest venture is his very own range of flour blends and mixes the ‘Rick Grant Gluten Free Range’.
This range will help consumers that must adhere to a Gluten Free diet to make delicious dishes that the whole family can enjoy, making this range a ‘must have’ for the family pantry.
Melinda Morrisson
Melinda Morrison is an Accredited Practicing Dietitian (APD) and Credentialed Diabetes Educator (CDE) with over 12 years experience in the dietary management of diabetes. Melinda holds a Master of Science (Nutrition & Dietetics) and Graduate Certificates in both Diabetes and Paediatric Nutrition. Currently she is a Paediatric Diabetes Dietitian at Diabetes Australia-NSW and is passionate about healthy eating for kids with diabetes. Melinda has a long standing involvement in diabetes kid’s camps; she is the co-author of the www.diabeteskidsandteens.com.au website and Professor Bumblebee’s Guide to Type 1 Diabetes. Melinda regularly presents and writes education materials on nutrition and diabetes management.
Jody Vassallo
Jody Vassallo has written cookbooks for many years. She is the author of the highly successful marie claire style series recipe books: Drinks, Pasta, Seafood, Noodles, Brunches, Supper & Sweet. Jody has a strong interest in nutrition and health and is responsible for the recipes in the National Heart Foundation of Australia’s “Deliciously Healthy CookBook”.
Her other titles include Murdoch Books' Vitamin & mineral counter, Fat & Fibre Counter and A Big bowl of Noodles. Jody works as a consultant to the NSW Institute of Sports and is a regular contributor to Australia’s top food magazines.
Joanne Turner
Joanne Turner is an award-winning accredited practicing dietitian, sports dietitian and exercise physiologist.
Joanne consults to the food industry, elite sporting teams and also to Diabetic Living Magazine, Better Homes and Gardens Magazine, Nickelodeon, as well as various websites.
She is a regular media consultant and has appeared on Sunrise, The Morning Show, Today Tonight, Channel 10 and Foxtel. Joanne is also a regular guest on radio stations around Australia.
Sue Shepherd
Dr Sue Shepherd is an Advanced Accredited Practising Dietitian with fourteen years experience, has coeliac disease herself and in 2008 completed her PhD research into aspects of fructose malabsorption, coeliac disease, low FODMAP diets and Irritable Bowel Syndrome. Sue developed the "low FODMAP diet" for Irritable Bowel Syndrome.
She has graduated with a Bachelor of Applied Science in Health Promotion and post graduate Masters in Nutrition and Dietetics. Her expertise is recognised internationally and she has won numerous awards including the Dietitians Association of Australia Annual Award for Achievement for outstanding contribution to the profession and Douglas Piper Young Investigator Award from the Gastroenterological Society of Australia.
